Lola makes spice so nice letting you shine in the kitchen.

LOLA’S RUBS are inspired, handcrafted spice blends made to evoke taste memories of the delicious beauty of a Cape Cod summer. Barbeques and bonfires, beach days or walks in the backwoods. Swimming in kettle ponds, the taste of saltwater, casual times with family and friends. This is the spice of life!

Lola cultivates her own herb gardens and sources ingredients from H&H Farm and a variety of local growers, which are air-dried or dehydrated.

She uses organic ingredients as much as possible, and loves local vendors. Chequessett Chocolate in Truro supplies the cacao nibs used in our kitchen, frankly this local resource allows us to share our Chequesett Char blend with you. Atlantic Spice, supplies some ingredients, while others are obtained farther afield from trusted vendors.

Mix your own kitchen magic

Use as a dry rub, or mix with something liquid to create a spice paste, (try fruit or vegetable juices, healthy oils, or kick it up with spirits). Use as a condiment on greens or vegetables, great for corn-on-the cob, popcorn, roasted nuts. Add to stews, sauces, make a salad dressing—get creative—they make everything taste better.

Sunny, saucy, seductive—the mix that made Lola famous.

This magic blend is delicious on anything and can be used on EVERYTHING!

First you taste the smoke from strong Spanish paprika, next the sweet heat of chile vibrates; the taste of thyme is followed by the sassy pop of mustard and celery seeds.

Use as a rub with fresh lime juice and leave to marinate overnight, it’s worth the wait. Unleash your culinary creativity—it’s the perfect condiment to use in marinades, brines, glazes, dressings, and dips. A nice addition to roasted nuts, olives, or popcorn, the sky’s the limit and it’s addictive!

No1b Universal Magic maple glaze

Baste away!
Mix contents with 2oz. of maple syrup and 4 tbsp. of butter to create a glaze for vegetables, spareribs, turkey or ham.

No2 Chequessett char

Bold, rich and savory with an intense, distinctive aroma.
The complex notes of raw cacao from Chequessett Chocolate in Truro, are tempered by the smoky undertones of chipotle and paprika. Onions, cumin and allspice add depth and richness to any dish.

Developed as a condiment for Kale and other sautéed or steamed greens, Chequessett Char is also perfect used on anything orange (grilled apricots or peaches, carrots, peppers, squash, yams) and is nicely activated with an orange juice drizzle.

Gives great char to grilled ribs, steaks or chops. An excellent dry rub for fowl, heavy white fish (Hake, Halibut or Swordfish) shrimp or scallops.  Good flavor for chili or stews. Lola adds it to brownies, cocoa and peanut butter. Makes Garbanzo beans sing! Makes Chocolate Chip cookies zing!

No3 Billingsgate Bay

The smell of salt air in the dunes.

The lost island of Billingsgate was once at the entrance of Wellfleet Harbor, its erosion was a gradual process and by 1942 it was completely submerged.

Lola’s briney twist on the classic “Old Bay” evokes historic fishing practices using gill nets and weirs and makes you think of a day (lost in wonder) at the beach. Lola loves this on white fish and shrimp, clams and crabs. Great on grilled lobster, or add it to the butter.

No4 bonfire bright

Firelight, smoke and embers.
Dehydrated tomatoes and Persian lemons are bright, dancing flavors. Smoked sea salt fans the smoldering undertones of black sesame seeds and the umami of Urfa Biber chile. This blend is fantastic on cheese or vegetables. Shake it on greens or beans. Mix into clam dip. Dress up a Caprese salad, liven up pasta or a meatloaf.

No5 Prime

Crisp, crackle and punch.
The bite of mixed peppercorns is soothed by rosemary and thyme. Dehydrated organic garlic and onion and kosher salt make a perfect rub for beef, hen or hog. A bit of arrowroot helps crisp the crust. Best on Prime Beef, Hen or Hog.
